Bartender and mixologist Gen Yamamoto crafts some of the world's best cocktails. This is hardly an understatement: seatings at his bar book out weeks and even months in advance, and all of it rests on the quality of his drinks.

Here, you're drinking individual creations unlike any of the classics you'll have encountered in bars. Warmed daiginjo sake might be combined with a cold strawberry cream; Spanish gin, tomatoes and perilla leaf makes an explosively flavoured drink. His creations change with the seasons, making this feel like a kaiseki dining experience in the form of cocktails.

The cocktails are a little lighter on the alcohol, which is entirely understandable when you're downing 6 of them in the space of 1.5 hours. This is not a place to drink for the sake of getting drunk. Make your reservation and enjoy those life-changing drinks.
